Local olives: taste the other Mallorca

Mallorcas fertile soil and vibrant agriculture are hallmarks of the other Mallorca. A place where traditional delicacies literally grow on trees.

Olives are a delicious example of the other Mallorca. In fact olive cultivation on Mallorca dates back to pre-Roman times. Yet growing in healthy groves is just the first step in the harvested Mallorcan olive lifecycle. 

Many olives are transformed into distinctively fresh olive oil. Others are tempered in brine for serving as a tasty accompaniment to many traditional Mallorcan dishes or to simple bread and dips. Here olives are immersed in a salty concentrated brine for an extended period depending on their type. Green olives spend three months in brine while black olives are immersed for only two months. Once natural fermentation is complete, olives are given an extra kick of flavor. Garlic marinade is a favourite Mallorcan way of adding extra dimensions to the taste of olives. Others include seasoning with the likes of thyme, fennel or pepper.
