Mallorcan pastry: ensaimada

Ensaimadas are so versatile they can be enjoyed any time of the day. Dip this sweet bread into your morning coffee for a decadent breakfast. Or make this traditional Mallorcan pastry your afternoon tea delight. You can even top off a delicious dinner by saving ensaimadas for dessert. 

So what exactly goes into ensaimadas? True traditional recipes simply whipped up sweet bread with a lovely coating of sugar. In the last century though, delicious variations have cropped up. Cream and almond nougat are just a few filings used to make ensaimadas an even sweeter delicacy. Yet another version blends pumpkin pulp with sugar syrup. This particular concoction is known as cabello de angel or ‘angel’s hair’ thanks to the golden strands of pumpkin running through the bread.

Whatever twist is put on a batch of ensaimadas, these traditional Mallorcan pastries 
have distinct presentation. Once the ensaimada dough is risen and thinly rolled it is carefully coiled. Out comes a special fluted pan where the dough sits until risen once again. Finally, the ensaimada creation is baked.
