This particular concoction is known as cabello de angel or ‘angel’s hair’ thanks to the golden strands of pumpkin running through the bread.

have distinct presentation. Once the ensaimada dough is risen and thinly rolled it is carefully coiled. Out comes a special fluted pan where the dough sits until risen once again. Finally, the ensaimada creation is baked.
